Pork & Pear Traybake

INGREDIENTS

  • 4 Pork medallion steaks

  • 250g Baby beetroot, roughly chopped

  • 4 carrots, quartered lengthways

  • 2 pears, cored, cut into wedges

  • 6-8 cloves garlic, whole

  • 6 baby onions, whole, or 2 brown onions, quartered

  • 2 tbsp olive oil

  • 12-15 sage leaves

  • Salt and pepper, to season

Instructions 

  1. Place pork, vegetables and garlic in a roasting pan.

  2. Drizzle with oil and toss to coat.

  3. Arrange in a single layer, sprinkle sage leaves over, season and roast for 20 mins.

  4. Remove pan from oven and sprinkle with extra fresh sage, if desired and serve.
