Rose Harissa Meatballs

Ingredients

  • 500g lamb mince

  • 2 tbsp Josh&Sue Rose Harissa Paste

  • 1 tsp salt

  • 1/4 cup finely chopped flat leaf parsley, plus extra to garnish

  • 1 egg

  • 1/3 cup breadcrumbs

  • 1 tbsp extra virgin olive oil

  • 4 tomatoes, finely chopped

  • Small bunch thyme

  • 1 tbsp sugar

Method

  1. Place the lamb, salt, parsley, egg and breadcrumbs in a large bowl and mix well to combine, roll into balls.

  2. Heat oil in a large saucepan and cook meatballs for 3-4 minutes until browned. Add tomato, thyme, sugar and cook covered until meatballs are cooked through.

  3. Serve with pasta of your choice, and garnish with parsley.
